Peanut Noodle Salad

So before I begin, I have to apologize for the pictures in this post. They’re boring and don’t even include the protein in it!

Who the heck do I think I am?!

Bear with me.

Don’t let that deter you from making this recipe.

It’s delicious and one of my favorites.

The best part? It’s super fast.

Like seriously.

You’ll be done so fast your kids will think you’re a magician.


Let’s get started.

Here’s what you need:
-8 oz whole wheat linguine (or soba noodles)

-1 package broccoli slaw

-1 lb cooked shrimp

-3 TBSP natural peanut butter (It has to be natural. I’m pretty sure this recipe would be yucky with the regular stuff because of the consistency and sugars)

-3 TBSP rice vinegar

-3 TBSP low sodium soy sauce

-Splash of water

Here’s what you do:
-Cook the linguine according to directions. I like to do it in the morning or night before to save time.

If you do that, be sure to add a little oil to the noodles so the don’t get too sticky.

-In a small container, mix the liquid ingredients and peanut butter together until a smooth dressing is created and set aside.

-Add the broccoli slaw to your linguine and stir together in a pan over medium heat, allowing the slaw to slightly wilt (about 3-5 minutes).

Incase you have no idea what I’m talking about when I say, “broccoli slaw,” it comes in a package you can buy at most stores.

-Add the dressing and toss to coat.

-Add in your shrimp, if desired and enjoy!

Easiest dinner ever. It’s one of my absolute favorites, probably since I’m a peanut butter addict. I love the peanut-y taste against the slight bite of the rice vinegar and soy sauce, and then the broccoli slaw adds a nice subtle crunch. It’s great hot or cold, which makes me love the versatility all the more!
