Chili to Stop Being Chilly

Are you freezing like I am? Geez! I am cold all the time.

Any my nose won’t stop running.

And my hands feel like popsicles.

As do my toes.

And Will gets incredibly offended when I try to use him as a warming mechanism.

Rude!

Anyhow, I thought my lunch this week should be something hearty and warm.

So I made this vegan chili!

Can you open lots of cans?

If so, you can make this lickety split!

(note to self: don’t ever say lickety split again. Ever)

This chili makes a giant pot, 10 servings strong. I’m pretty sure I will be absolutely sick of it by the end of the week.

Awesome!

Let’s go.

I chopped up two green peppers

Added a chopped red onion

A jalepeno with the seeds. Next time I make this I am going to use two.

Then I added a heaping tablespoon of minced garlic.

Then?

Then comes the can opening!

Dump in two 28 oz cans of crushed tomatoes, and one 28 oz can of whole, peeled tomatoes.

More cans!

Then I added two 7 oz cans of green chiles,

two cans of black beans

A can of chickpeas

And a can of kidney beans.

Time for spices!

I added cayenne

Red pepper flakes

And this super wonderful Tastefully Simple spice my MIL got us.

It is SO good. I’m sure you can find something comparable. Basically it’s just dried red and green peppers, garlic, and onion.

Spice liberally to taste AND put a lid on it!

I let it simmer for about an hour, stirring a few times.

Ready for the nutrition? Low cal and packed with healthy carbs, protein, and fiber. It is fairly high in sodium, so keep that in mind for the rest of your day.

This looks so good! Is it pretty spicy? I love spicy but Bryan and the boys complain about my spicy food. smile I like the idea of just making a big pot of soup and then putting it into serving size containers for the week. It would help so much with making healthier choices. With vegan, I find it hard to not eat a lot of carbs, and I do gain weight really easily with carbs. This is a great recipe that would make a quick lunch and not make me fat (well..no fatter than the baby is going to make me, ha!)
